Basic Oatmeal Porridge

For a delicious portion of oatmeal porridge, mix 1 dl of Happy Heart Scandinavian Fibre Oats with 2,5 dl of water and a pinch of salt. Boil for 3 minutes and stir occasionally. (2,5 dl = 1 cup.)

You can serve the porridge in many different ways. Add something sweet like sugar, honey, fruit or jam and serve with milk or without. With a little imagination you can make your oatmeal porridge taste different every day!

Peanut Butter Oatmeal Smoothie

Ever had a a rich cup of oatmeal smoothie? Try this recipe from our Nigerian team!

Ingredients (1 cup = 2,5 dl):
1 cup of Happy Heart Scandinavian Fibre Oats
1 ripe banana
2 spoons of peanut butter
2 spoons of honey
2 cups of milk

Homemade Oatmeal Pancakes

Enjoy the best homemade oatmeal pancakes recipe with our Happy Heart Scandinavian Fibre Oats! Another great recipe from our Nigerian Team!

Ingredients (1 cup = 2,5 dl):
1/2 cup of Happy Heart Scandinavian Fibre Oats
2 eggs, 1/2 cup of milk
1/2 spoon of baking powder
1/4 teaspoon of salt
Banana, cooking oil

Pour eggs, milk, oats, baking powder and salt into a blender. Add 1 or 2 pieces of banana as you wish as flavour. Blend until smooth.
Preheat a frying pan with cooking oil. Make sure it's very hot before you start cooking the pancakes.
Pour into the pan as your desired size of pancakes is reached and cook for two minutes. Flip the pancake and cook for another 2 minutes.
Arrange on a plate with bananas as topping and with some honey poured over.

Oatmeal Fufu / Swallow

For fufu and swallow lovers our Nigerian team present a healthy alternative recipe:

Measure 2 cups of Happy Heart Scandinavian Fibre Oats into the jar of your blender. Add 3 cups of warm water and allow to soak for about 4 seconds.
Blend until very smooth. (1 cup = 2,5 dl.)
Pour into a pot and place on low fire. Stir continuously until it comes together. (If you want it lighter, add water bit by bit and if you want it harder, add some Happy Heart Scandinavian Fibre Oats bit by bit.) Note: Don't leave unattended to avoid burning.
Allow it to cool for a minute then serve with any soup of your choice. Remember to let it cool before you start eating. It may seem too soft after cooking, but the cooling helps it thicken.

Overnight Oats

Enjoy the best of overnight oats with Greek yogurt!

Ingredients (1 cup = 2,5 dl):
1 cup of Happy Heart Scandinavian Fibre Oats
1 cup of milk
2 tablespoons of Greek yogurt
Banana and groundnuts / Apple and chocolate

Get a cup or jar and put in the ingredients step by step; 1 cup of Happy Heart Scandinavian Fibre Oats, 1 cup of milk, 2 tablespoons of Greek yogurt. Cover the jar/cup and place into the fridge till morning. Top with e.g. banana and groundnut or with apples and chocolate.

Oatmeal Crisp Fried Chicken

Ingredients (1 cup = 2,5 dl):
2 cups of blended Happy Heart Scandinavian Fibre Oats (blended into oat flour)
8 pieces of chicken
Black pepper, chili pepper, curry powder, salt
Corn starch, vegetable oil
2 cubes of Maggi seasoning (or 2 x 4g of any bouillon cube)
1 cup of milk, 2 eggs

Mix the Happy Heart Scandinavian Fibre Oats oat flour with ½ teaspoon of black pepper, ¼ teaspoon of chili pepper, ½ teaspoon of corn starch, ½ teaspoon of curry powder, ¼ teaspoon of salt and 1 cube of Maggi. Mix all together well and set aside.

Marinate the chicken with 1 cup of milk, 1 teaspoon of oil, ¼ teaspoon of salt, ¼ teaspoon of black pepper and 1 Maggi cube. Pour everything into a plastic bag and put into the refrigerator for minimum 45 minutes or leave overnight.

Break two eggs, add a pinch of salt and a pinch of pepper. Beat well and set aside.

Set the chicken in a tray, well-seasoned with some salt and pepper. Dip the chicken in the egg mixture and then coat with the oat flour mixture. Then fry for 6 minutes while turning side to side. Ensure the chicken is brown. Once done, remove from the oil. Serve with any sauce of your choice.

Oatmeal Yam Balls

Ingredients (1 cup = 2,5 dl):
2 cups of blended Happy Heart Scandinavian Fibre Oats (blended into oat flour)
3-4 chunky slices of yam
1 teaspoon of pepper
1 teaspoon of salt
1 teaspoon of ginger
1 cup of milk
2 eggs

Cut and boil your yam with salt and then allow to cool. Mash or grate the yam into a bowl. Mix with salt, pepper, ginger, milk and one egg and taste to know if you need any more ingredients.

Break and beat the last egg in another bowl. Roll the mashed yam into balls, coat with egg and then roll in Happy Heart Scandinavian Fibre Oats oat flour and set aside.

Pre-heat vegetable oil. Fry balls until they turn golden brown. Serve with fried egg or sauce and dig in!

Homemade Scandinavian Oatmeal Fish Roll

Ingredients:
3 cups of blended Happy Heart Scandinavian Fibre Oats (blended into oat flour)
1 large fish, ½ onion and 2 pieces of red bell pepper
1 teaspoon each of ginger powder, curry and red pepper
1 cube of seasoning (or 4g of any bouillon cube)
2 teaspoons of yeast and 1 teaspoon of baking powder
3 teaspoons of butter
1 teaspoon each of salt and sugar
Water, cooking oil

Boil the fish, remove all bones and shred into pieces. Stir fry bell pepper, onion and all spices for 2-3 minutes. Add the fish and 1/3 cup of water. Cook until it thickens and set aside to cool.

Mix yeast, sugar and 1/3 cup of water and set aside for 8 -10 minutes. Combine the Happy Heart Scandinavian Fibre Oats oat flour, butter and salt. Mix until it becomes crumblike. Add the yeast mixture to the flour. Mix until a dough is formed and place in a warm place to rise (45-60 min).

Bit by bit, roll it with a rolling pin and put in your fish filling and roll up. Put cooking oil into the pan and when it is hot put in the rolls. Do not put all at once. Fry until they turn golden brown and enjoy!

Oatmeal Energy Balls

Ingredients (1 cup = 2,5 dl):
1/2 cup of Happy Heart Scandinavian Fibre Oats
1/3 cup of peanut butter
1 tablespoon of honey
1 tablespoon of chocolate chips (optional)
Salt to taste

Mix all ingredients together until well blended. Put into the refrigerator for 30 minutes. Use a spoon to scoop the mixture into your hands and form a ball. Serve when ready.

Can be stored in a sealed container in the refrigerator and will last up to 1 week.

Oatmeal Corn Dogs

This is an easy to make, dangerously delicious and addictive food!

Ingredients (1 cup = 2,5 dl):
Hot dogs or sausages
Chop sticks
1 cup of blended Happy Heart Scandinavian Fibre Oats (blended into oat flour)
1/4 spoon sugar and 1 teaspoon of baking powder
2 teaspoons of melted butter, 1 cup of milk, 2 eggs and oil

Cut the sausages into half. Insert a chop stick into each sausage and set aside.

Mix all ingredients together in a deep bowl; Happy Heart Scandinavian Fibre Oats oat flour, sugar, baking powder, melted butter, milk and the eggs. Mix well and ensure the mixture is not watery.

Put a pan on fire with oil in it - you are deep frying it so ensure you have enough oil! Coat the sausages with the mixture (dip sausage in mixture and roll well). Ensure the mixture sits well on the sausage and fry for about 5 minutes. Serve with any sauce of your choice and enjoy!

Creamy Oats Porridge

For a more luxurious preparation you can also cook your oats in milk instead of water:

Pour ½ cup of Happy Heart Scandinavian Fibre Oats into 1 cup of milk and stir. Cover and cook for 3 minutes. Add honey, cover and leave for 1 minute on a low heat. Serve with fruits of your choice.

Oatmeal Muffins

Ingredients (1 cup = 2,5 dl):
1 ½ cup of blended Happy Heart Scandinavian Fibre Oats (blended into oat flour)
2 teaspoons of baking powder
½ teaspoon of cinnamon powder
½ teaspoon of nutmeg powder
1 teaspoon of baking soda
½ teaspoon of salt

Mix all dry ingredients together in a bowl and set aside. Proceed to mixing all fluid ingredients together in another bowl. Mix the content of both bowls together. Scoop in your mixture into the cupcake cups and put some dried fruits on top. Pre heat the oven to 350°F / 175°C. Put in the muffins and bake for 25 minutes. To know if they’re done put a thin stick into the middle and bring it out. No stain on the stick means your muffins are ready.

Happy Heart Scandinavian Fibre Oats Breakfast Bake

Surprise your loved ones with this great breakfast bake!

Ingredients (1 cup = 2,5 dl):
3 cups of Happy Heart Scandinavian Fibre Oats
2 tablespoons of brown sugar
1 teaspoon of baking powder
1 teaspoon of ground cinnamon
1/8 teaspoon of salt
1 cup of non-fat milk
1 teaspoon of vanilla extract
2 egg whites

Preheat the oven to 350°F / 175°C. Stir Happy Heart Scandinavian Fibre Oats, brown sugar, baking powder, cinnamon and salt together in a large bowl. In another bowl stir milk, vanilla and egg white together. Add the combined wet ingredients to the dry ingredients and allow to sit for about 5 minutes until the liquid is absorbed.

Grease a muffin pan, portion the mixture into the pan cups and bake for 20 minutes. Serve with toppings of your choice!

Oatmeal Mosa

Nothing screams it’s weekend like a bowl of homemade oatmeal mosa from our Nigerian chef!

Ingredients (1 cup = 2,5 dl):
2 ½ cups of Happy Heart Scandinavian Fibre Oats
½ onion
4 pieces of red bell pepper and pieces of long thin pepper
1 teaspoon of ginger powder
1 cube of Maggi seasoning (or 4g of any bouillon cube)
Water and salt

Mix 2 cups of Happy Heart Scandinavian Fibre Oats, the onion and the peppers into the blender and add 3/4 cup of water. Blend until it is smooth. Add water bit by bit if necessary, but don’t let it get watery. Pour it all into a bowl and add ginger powder, Maggi seasoning and a pinch of salt. Mix it all together and taste to know if you will need more salt. Afterwards add ½ cup of Happy Heart Scandinavian Fibre Oats to the mixture and mix well. Use a deep-frying method. When hot, scoop the mixture bit by bit into the hot oil. Fry and flip when brown. Drain, serve and enjoy!

Happy Heart Banana Oatmeal Smoothie

Ingredients (1 cup = 2,5 dl):
¼ cup of Happy Heart Scandinavian Fibre Oats
1 banana
½ cup of low fat yogurt
½ cup of fat free milk
2 teaspoons of honey
¼ teaspoon of ground cinnamon

Mix Happy Heart Scandinavian Fibre Oats, banana, yogurt, milk, honey and cinnamon in a blender and blend until smooth. Serve immediately with your choice of toppings!

Cinnamon & Banana Smoothie

Ingredients (1 cup = 2,5 dl):
1/4 cup of Happy Heart Scandinavian Fibre Oats
1/2 cup of low-fat yogurt
1 Banana
1/2 cup of fat free milk
2 tsp of honey
1/4 tsp of ground cinnamon

Blend Happy Heart Scandinavian Fibre Oats, yogurt, banana, milk, honey and cinnamon together. Puree until smooth and serve immediately with your choice of toppings.

Oatmeal fish balls

Ingredients (1 cup = 2,5 dl):
1 can of sardines
1 & 1/2 cup of Happy Heart Scandinavian Fibre Oats (grinded into flour)
1/2 tbsp of baking powder
2 tsp of salt
1 tsp of pepper powder
2 tbsp of spring onions
1 small whole onion
1 tsp of garlic powder
2/3 small pieces of red bell pepper
1/2 cup of water (add more if needed)
Oil for frying

De-bone the sardines into a bowl and mash well. Mix salt, pepper, garlic, onions, spring onions and bell pepper. Mix your oat flour and baking powder together and pour into the mixture of fish. Mix the other ingredients together and as you mix, pour in water bit by bit and mix thoroughly.

After the mixture is set, place aside and prepare your pan by heating up the oil inside. Once the oil is hot enough, drop your mixture into the oil one scoop at a time and fry. Once brown, flip to fry the other side. When done, place in an oil drainer and let the oil drain. Serve with any sauce of your choice.

Oatmeal Yamarita

Ingredients (1 cup = 2,5 dl):
1/2 tube of yam
2 eggs
3 tbsp of oat flour (blended Happy Heart Scandinavian Fibre Oats)
2 tsp of sugar
1 tsp of salt
1 tsp of dry pepper
Vegetable oil for deep frying

Cut the yam into rectangular shapes. Afterwards, wash and boil with salt and water. Be careful with the amount of water to stop the yam from breaking into pieces. Beat the eggs in a separate bowl, add salt and seasoning to your desired taste and set aside. Mix the flour with dried pepper and add some seasoning spices as well and set aside. Then, check your yams texture with a fork. If it goes through, turn off the heat and drain the water.

Heat up some oil in a frying pan (enough to deep fry the yam) and when the oil is hot enough, take the yam and soak it in the beaten eggs and make sure it soaks in. Once soaked remove from the egg and roll it in the flour and dried pepper mixture (making sure the flour covers all the sides of the yam) and then gently submerge in the oil. Continue the process until all the pieces are done. Arrange them on a paper towel to remove excess oil and enjoy!

Basic Homemade Granola & Parfait

Ingredients for granola:
2 ¼ cups of Happy Heart Scandinavian Fibre Oats
¼ cup of honey
1 tsp of salt

Pour Happy Heart Scandinavian Fibre Oats into a bowl with honey and salt and mix well. Prepare a flat pan, cover it with a baking sheet and spread the mixture on it. Afterwards, put the mixture in the microwave on a low heat for 45 mins. Check at intervals to see that it all has dried up. When ready, set aside and let it cool down completely and your granola is ready.

Ingredients for parfait:
2 cups of Greek yogurt
1 cup of granola (Roasted Happy Heart Scandinavian Fibre Oats)
½ cup of coconut, sesame and peanut.

Spoon in your Greek yogurt to cover the bottom of your cup or glass and top it up with your granola and coconut, sesame and peanut. Follow that up with a spoon of Greek yogurt and apples or any fruit of your choice diced on top. Add more granola on top then keep refrigerated and eat when ready

Oatmeal tacos

The filling depends on your choice (corn beef, vegetables  &  sauce was used in the recipe)

Ingredients:
1 cup of oat flour (blended Happy Heart Scandinavian Fibre Oats)
½ cup of corn starch
2 tsp of sugar
3 tsp of vegetable oil and a pinch of salt

Combine all ingredients together. Add water in bits, then mix thoroughly. After the dough thickens, cover to rest for 10mins.  Afterwards start rolling out your dough to your desired thickness. Cut out dough in circles and make fork marks, (it prevents it from trapping excess air). Bake in an oven at 150°c to 170°c for 10 minutes.  Serve with your preferable fillings and enjoy!

Groundnut oat cookies

Ingredients:
1 cup of oat flour (blended Happy Heart Scandinavian Fibre Oats)
1½ cup of groundnut
1/3 cup of honey
½ cup of milk
1 egg

Blend or pound your groundnut then mix flour, egg, honey and milk in a bowl. Combine all ingredients and mix thoroughly to form a thick paste. Mold into your desired shape and place on a greased baking pan. Afterwards, bake in an oven at 170°c to 180°c for 10 to 15 minutes. Monitor the cookies so it does not get burnt. Serve with milk and enjoy.

Masala

¼ cup of chopped onions
½ tsp of salt
½ cup of chopped vegetables (red bell pepper, green bell pepper, yellow bell pepper)
½ ml of turmeric powder
1 cup of Happy Heart oats
3 cups of water
¼ tsp of red chili powder.

first heat up a nonstick pan and add onions and salt. Then roast the onions until they turn translucent. Add in the mixed veggies and salt for a minute then add the turmeric powder and some seasoning and mix well. Add about 1 cup of water and cook closed in medium flame until the veggies are 3/4 done. Now add the remaining 2 cups of water and let the water boil. Then add Happy Heart Scandinavian Fibre Oats and mix well. Continue to cook until the oats are done. Turn off the flame and serve with a garnish of coriander leaves or scent leaf.

Oat puff puff

Ingredients:
1/2 cup of sugar
2 tsp of dry yeast
1 tsp of nutmeg
1/2 tsp of salt
2 cups of Oat flour (blended Happy Heart Scandinavian Fibre Oats),
1&1/4 cup of warm water.

Pour your dry yeast in a bowl and then add 1 tsp of sugar. Add 1/4 cup of warm water then mix thoroughly. Set aside for 5-10 minutes. While the yeast is proofing, pour the oat flour (grinded Happy Heart Scandinavian Fibre Oats) in a bowl and add another 1/4 cup of sugar, nutmeg and salt together. Check the yeast mix, it should have risen and have a creamy foam on the surface. Pour the mixture into the flour and mix thoroughly. Add more water gradually then mix into a batter not too thick and not too thin. Mix well into a smooth batter then cover with a foil and a napkin.

Open after 45 mins. The batter should have doubled in size. Then fill your pan or pot with enough oil to deep fry. Scoop batter with hand in a round shape into the oil. Fry under medium heat and flip to fry on both sides. Take it out when it's golden brown, then serve and enjoy.

Oatmeal carrot cake

Ingredients:
2 cups of oat flour (blended Happy Heart Scandinavian Fibre Oats)
1 tsp of baking soda
1 tsp of baking powder
1 cup of brown sugar
1 tsp of cinnamon
½ tsp of nutmeg
½ tsp of salt
¾ cup of milk
½ cup of cooking oil
1 tsp of lemon juice
3 eggs
1 tsp of vanilla extract
1 cup of grated carrot.

Start by mixing all dry ingredients in a bowl. After mixing it well set it aside. In another bowl, mix together all the wet ingredients such as the milk, oil, lemon juice, eggs and vanilla extract. pour the mixed wet ingredients into the dry mixture. Mix well to make sure all the ingredients blend in together as a paste like form. Pour in the grated carrots and mix well. Grease your baking pan well and then use a measuring cup to pour in the mixture into the baking pan. Pre heat oven at 175°. Put in the baking pan into the oven and bake for 22 to 25 minutes. To know when it's done, stick a fork into the middle and remove. If there’s no stain on the stick, your cake is ready. Enjoy!

Steamed Chocolate Oat cake

Ingredients:
1/2 cup of buttermilk
1/3 cup of water
1 egg
1/2 tsp of salt
1 tsp of baking soda
1 tsp of baking powder
3/4 cup of sugar
1/3 cup of cocoa powder
1 cup of oat flour (blended Happy Heart Scandinavian Fibre Oats),
1/4 cup of vegetable oil

Put all the wet ingredients together in a bowl and whisk. Add all the dry ingredients and mix until a smooth batter is formed. Pour into a dish lined with baking paper. Fill a pot with warm water and place the dish inside. Cover the dish with aluminum foil. Steam the dish until a you can insert a fork in the center and it comes out clean. (30- 50 minutes).

Oatmeal butter cookies

Ingredients:
1 cup of icing sugar
4 sticks of butter (450g)
2 tbsp of vanilla
2 large eggs
4 cups of oat flour (blended Happy Heart Scandinavian Fibre Oats)

Cream the butter and icing sugar in a bowl. Add vanilla and eggs and continue creaming. Add oat flour and mix well. If the mixture is to hard, add milk to soften it a bit. Transfer into a piping bag and pipe out your desired shape on a baking sheet. Put into the oven and bake for 12 to 15 mins. When ready, cool them down a bit before removing it from the baking sheet. Enjoy.

Oat plantain puff

Ingredients:
1 overripe plantain
1 cup of oat flour (blended Happy Heart Scandinavian Fibre Oats)
½ tsp of baking powder
1 tbsp of sugar
1 tsp of dry yeast
½ cup of water
¼ tsp of salt.

Mash the overripe plantain in a bowl. Combine all the dry ingredients together and mix. Then add the plantain puree. Add water bit by bit and mix. Cover and leave for 20 to 30 mins. Deep fry for 3 to 5 mins in vegetable oil on a medium heat.

Banana and Grapes Oat smoothie

Ingredients:
½ cup of Happy Heart Scandinavian Fibre Oats
1 whole banana
½ cup of frozen grapes
1 cup of Almond milk

Pour all ingredients into the blender and let it sit for 5 minutes to let the oat absorb the almond milk. blend until there’s a smooth consistency. When done, serve chilled.

Oat and Apple breakfast

Ingredients:
3 tbsp of Oat flour (grinded Happy Heart Scandinavian Fibre Oats)
1 whole chopped apple
1 cup of milk
½ tsp of cinnamon
1 tbsp of honey and some chopped groundnut as toppings.

Pour oat flour, half the milk and honey in a bowl and let it sit for 5 mins. Then pour into the blender adding the rest of the milk, apple and cinnamon powder and blend together until smooth. Pour into a glass and refrigerate to chill. When ready to drink and add chopped groundnut as toppings.

Oatmeal watermelon slush

Ingredients:
1/3 cup of Happy heart Scandinavian fibre oats
200g fresh frozen wratermelon
1 cup of coconut water

Pour all ingredients into the blender and if wanted let it sit for 5 minutes to let the oat absorb the coconut water. blend until there’s a smooth consistency. When done, serve chilled.

Oats Omelette      

Ingredients:
¼ cup of oat flour (blended Happy Heart Scandinavian Fibre Oats)
2 Eggs
2 tsp of chopped onions
1 tsp of chopped green chili pepper
1 tsp of yellow bell pepper
1 tsp of red bell pepper
3 tsp of milk
salt and pepper

Combine oat flour, salt, pepper and mix in a bowl. Add the two eggs into the bowl and whisk everything together. Mix in your chopped onions, green chili, bell peppers and let it sit for a while. Heat a pan with a little bit of oil and pour in the omelette mixture. After the omelette is cooked on one side, flip it over and cook evenly on both sides until done.

Chocolate oatmeal breakfast

Ingredients:
2 tsp of cocoa powder
½ cup of Happy Heart Scandinavian Fibre Oats
½ cup of milk
½ tsp of cinnamon
1 tbsp of brown sugar

In a small saucepan, bring the water and milk mixed with cocoa powder, cinnamon and brown sugar to a boil. Reduce the heat to low and pour in the oats. Make sure to stir occasionally until the oats are soft and have absorbed most of the liquid (about 5 minutes). Remove from heat, cover and let it cool for 2-3 minutes

Strawberry coconut oat smoothie bowl

Ingredients:
1 banana
1 cup of coconut milk
1 cup of Happy Heart Scandinavian Fibre Oats.
1cup of frozen strawberries

Pour all ingredients into your blender and blend together. Pour into a bowl and top it with homemade Granola (roasted Happy Heart Scandinavian Fibre Oats) and other toppings of your choice such as banana or strawberries. Enjoy!

Oat Pina-colada & Oat Merry Berry

Oat Pina-colada:

Ingredients:
3 pieces of Banana
¼ cup of frozen pineapple
¼ cup of low-fat yogurt
I cup of almond milk
½ cup of Happy Heart Scandinavian Fibre Oat.

Blend all ingredients together and enjoy your delicious smoothie.

Oat Merry Berry:

Ingridients:
1 cup of strawberries
1 cup of blueberries
2 pieces of banana
1 cup of pineapple juice
¼ cup of Happy Heart Scandinavian Fibre Oat.

Put all ingredients into a blender and blend together. Serve chilled and enjoy.

Oat Egg Roll

Ingredients:
6 boiled eggs
1¼ cups of oat flour (blended Happy Heart Scandinavian Fibre Oats)
2 tsp of baking powder
2 tbsp of sugar
½ tsp of salt
1 tsp of nutmeg
1 uncooked egg
½ cup of milk
Oil for frying

Firstly, boil your eggs then peel the shell off when cold, and set aside. In a bowl, add the uncooked egg, milk and whisk together. Add the remaining ingredients such as sugar, baking powder, salt, nutmeg and oat flour. Mix properly until you get a smooth batter. Pour a handful of your oat flour and use it for dusting your boiled eggs.  Put a stick into the middle of the egg and roll firstly in the dry oat flour before rolling it in the batter. Get your oil ready on medium heat and drop the rolled egg into the hot oil.  Fry on medium heat and stir from time to time so they do not get burnt. Place on paper to dry and enjoy.
